Vegan 21 Day Fix | Days 16-18

Finally, I’ve stopped cheating so incessantly on the Fix.

Partly because I’ve got some BIG CHANGES happening in my life right now.

I’ve been busy, busy, busy.

 

Day 16

I shot up in bed day 16 morning and shouted, “That’s it!” at the top of my lungs.

Sometimes, I scream in my sleep. I had no idea I did this until Husband pointed it out.

Usually, I wake myself up.

What was “it” in my dream this morning? Well, I had JUST come up with the perfect name for my new “running business.”

Yeah. ME. A running business.

I nearly laughed myself to my coffee pot this morning.

Couldn’t tell you what the name was, though. I forgot it the moment I shouted myself awake.

 

Day 16 exercise = I did Autumn’s Lower Fix workout video. This time, I upped my weights from 15s to 18s. WHAT A DIFFERENCE SIX POUNDS MAKES. Wobbly Leg City over here! Autumn says, “Shake now so you don’t shake later!” It’s funny because it’s true. We must love the burn if we hope to have firm thighs.

 

I ate some overnight oats while I tidied up my days 13-15 post and then trekked to work.

 

I just can’t wait for Husband to come home.

Did you know? We’re planning a vacation when he comes back.

We’re I’m calling it a “babymoon.”

know babymoons are supposed to be taken right before the baby is born, but this babymoon is going to be taken as a celebration to the start of our reproductive years!

Guess what we are trying to plan for our babymoon?

 

A CRUISE.

 

Cruises are much cheaper than all-inclusives in Cancun and the Dominican Republic right now.

And, plus, when Husband and I stayed in a Cancun all-inclusive on our honeymoon last August, we remarked that we were ready to try something new.

All-inclusives are just as indulgent as they sound, but we need a little more adventure.

 

And, now, WE MIGHT BE ISLAND HOPPING on a huge boat and I’m so excited I’m losing sleep over it.

I feel like Christmas is coming in October.

It is, because there is no way we’ll be able to afford Christmas after this trip.

 

And hopefully I’ll be nice and knocked up by the time we get back.

TMI?

Get ready for TMI, because when I’m pregnant, you KNOW I’m going to be giving you as many details as I possibly can.

😉

I can’t WAIT to be pregnant. I anticipate it being the greatest time of my life. My mother’s pregnancies were glorious, so I expect mine to be the same.

Husband is sometimes more excited than I am for me to be pregnant. I love it.

Bring on the babies!

 

Also, we received some HUGE NEWS on day 16 that I’m not at liberty to discuss just yet.

 

But I will discuss it with you IN DETAIL as soon as possible.

 

I had some more of my mega crunchy salad on day 16, and I don’t know if I’m just finally reaching the flavors at the bottom of this giant bowl of salad, but it was actually pretty good today!

 

When I returned home from work, I cut up and prepared more tofu. Remember when I talked about coating my tofu in cornstarch to make it crispier? Well, that’s what I did.

I mixed about a 1/4 of cornstarch with pepper, a little bit of salt, and some paprika.

Then, I tossed my cubes in there and covered them with the starch mixture.

I’m sure my cornstarch is just loaded with GMOs and pesticides and heaven knows what else, but I’m focused on VEGAN right now, not GMOs.

 

I then sprayed a hot pan with coconut oil and threw those little cubes in there.

Once the cubes were golden brown underneath, I flipped them. I also turned the heat up a little higher because I’m learning that tofu can take the heat.

I’m learning that, in fact, the hotter your pan, the crunchier your tofu. I cooked these puppies for a LONG time. I cooked them until I feared I was burning them. Only then did I turn off the heat.

And these tofu chunks were crunchy. I could tap them on the counter and hear them knock back.

FINALLY!

 

I tossed them on top of some spring greens and diced cherry tomatoes.

This salad was delicious. The cornstarch definitely gave them a bit of a crust. They could have used a little more seasoning, but they were good enough for me.

Cornstarch + pepper + salt + paprika + tofu = delicious vegan protein!

 

I finished the meal with a spectacularly sweet apple and ended my eating there.

 

What I ate on Day 16:

  • overnight oats = 1 yellow A, 1 orange
  • 2 cups of mega crunchy salad = 2 green, 1 teaspoon (oil), some orange from seeds, 1/2 yellow A
  • green pepper = 1 green
  • salad with tofu and cherry tomatoes = 2 green, 1 red
  • apple = 1 purple

Day 16 totals:

1 red (of 3)
5 green 
1.5 yellow A (of 3)
0 yellow B (of 1)
1 purple 
0 blue (of 1)
1ish orange
2 teaspoons of oil (from the salad’s oil + tofu)

 

I didn’t eat all of my containers because day 16 was a VERY busy day.

 

After that top-secret news was revealed to me on day 16, I was in information-gathering mode for the rest of the day.

 

I didn’t get my walk in. You know, the walk I promised to do after dinner every night?

I was feeling too lazy to lace up my tennis shoes and brave the outdoors.

But I made up for it by not having ANY desserts.

Which, if you’ve been listening, is kind of a big deal.

In fact, day 16 marks the first day I’ve been able to avoid dessert after dinner since I STARTED this vegan Fix.

*slow clap*

 

 

Day 17

I went to bed at like 8:30PM the night before, so I was fully rested on day 17. I felt great!

 

Day 17 exercise = For the first time, I did Autumn’s 30-minute Yoga Fix workout video. This was AWESOME. I felt so refreshed and relaxed the entire time. Only once did I feel my face heat up, but I didn’t break a sweat. I LOVED this workout. I told myself the entire time that I would consider doing it every day ON TOP OF whatever other workout I’d chosen. It made me feel THAT good. I felt like a new person. Calm, sure, complete. How does yoga do that?!

 

After yoga, I got ready for work and packed my lunch and then sat down with a bowl of oatmeal and my book – Crash and Burn by Lisa Gardner.

This book is getting very good. I’m having a hard time putting it down.

 

Work was busy, but I have also been very busy taking care of things that pertain to the BIG NEWS that was revealed to me on day 16.

 

Which means I kind of forgot to eat.

 

What I ate on Day 17:

  • oatmeal = 1 yellow A
  • 2 cups of mega crunchy salad = 2 green, 1 teaspoon (oil), some orange from seeds, 1/2 yellow A
  • Vega One = 1 red
  • 1 c. kale + tofu + cherry tomatoes + avocado + 1 cup of mega crunchy salad = 2 green, 1 red, 1 blue, 1/4 yellow

Day 17 totals:

2 red (of 3)
4 green (of 5)
1.75 yellow A (of 3)
0 yellow B (of 1)
0 purple (of 1)
1 blue
some orange
2 teaspoons of oil (from the salad’s oil + tofu)

 

I really wanted to make myself some dessert after the salad, but I resisted. I was reading Autumn’s Fixate cookbook, and in the first few pages, she talks about how she came to the realization that dessert is not an everyday thing.

And I went, huh.

I guess it DOESN’T have to be an everyday thing.

I’ve conditioned myself to eat something sweet every single day. In reality, though, I probably shouldn’t be eating dessert every single day. Especially since I ALWAYS eat way more of it than I should.

 

So, I’m going to stop eating after dinner and skip dessert for as many days as I can. It’ll probably do wonders for my blood sugar AND my waistline.

 

I finished Crash and Burn by Lisa Gardner right before I fell asleep. It was good! Suspenseful. Those are my favorite. LOVE murder mysteries. Any book that’s a little sick and twisted is my cup of tea. This one wasn’t quite as sinister or surprise-y as I like, but it was still a nice read!

Day 18

You know how I keep talking about BIG NEWS that I can’t share with you yet?

 

Well, I can share SOMETHING with you: I’m moving back in with my parents.

 

YUP!

I’m actually quite excited, because my mom is my favorite person and, also, there are kittens at her house.

 

I need to be out of my apartment by the end of August. Since Husband is currently in Georgia, I must pack up everything in our apartment by myself.

It’s a slow and steady process, and I’ve begun it immediately, since it’s going to take me a while.

Last night, I stood in my closet for three minutes straight trying to figure out where to start. VERY overwhelmed. But, I just STARTED, and before I knew it, I’d filled up all my empty boxes and totes!

 

Anyway, the reason I’m telling you this is because this whirlwind of BIG NEWS excitement plus lots of packing is quite draining on the body.

Guess what I did day 18 morning?

 

I slept through my alarm FOR SEVENTEEN MINUTES before it woke me up.

 

Lol – that’s me actually smiling because I can’t believe it happened. Because you know I’m a morning person. POP! right out of bed.

Not day 18 morning.

The sound of the alarm was incorporated into my dream.

The sound was coming from a bottle of liquor somewhere, and no matter where we hunted, we could NOT find this evil, loud, annoying bottle of liquor.

Yup.

 

 

Day 18 exercise = I did Autumn’s 30-minute Total Body Cardio Fix video. I should have taken my sleeping-through-alarm as a WARNING. OMG. This workout was so difficult. I could hardly keep up! I had to pause it between nearly every set just to catch my breath! This is the most EXCITING time of my life, but it is also very DRAINING, and day 18’s workout left me feeling like a puny shrimp. Got it done, though!

 

Every spare second at my apartment is spent packing.

I have over a month to get everything packed and moved out, so I’m doing my best to do it the RIGHT way.

The RIGHT way = no “bunch of random stuff” boxes.

I already have one Random Stuff box.

 

But, besides that, I’ve been gathering my candles and grouping them, my tools/screwdrivers/home repair things and grouping them, blah blah. The rest of my boxes will be categorized and sensible.

My house is basically a mess and I’m 1/100th of the way through our crap, but it’s not NEARLY as daunting as I thought it would be.

Probably because I’m throwing things away.

Like, a LOT of things.

Shoop! right into the trash.

It makes me feel so good to jettison things we don’t need.

DON’T WORRY MOM, I’m not throwing EVERYTHING away.

 

Pack, pack, pack, kill spider, pack, pack, sneeze, pack, ponder, pack.

 

You never realize how much junk you have until you have to MOVE it.

Husband and I possess so many things we never even use. But we must keep these things because you never know, you know?

See, I’ve still got some of my mother in me.

 

I grabbed an apple on my way out the door because I packed my way through breakfast.

 

What I ate on Day 18:

  • apple = 1 purple
  • 2.5 cups of mega crunchy salad + 1/4 c. edamame = 2.5 green, 2 teaspoons (oil), some orange from seeds, 1/2 yellow A, 1/2(ish) red
  • Vega One = 1 red
  • kale salad with cherry tomatoes and mushrooms = 2 green

Day 18 totals:

1.5 red (of 3)
4.5 green (of 5)
0.5 yellow A (of 3)
0 yellow B (of 1)
1 purple 
0 blue (of 1)
some orange
2 teaspoons of oil (from the salad’s oil)

 

Day 18 was another success with no dessert after dinner!

I’m bound to see some progress on day 21 now, right?

 

Did I mention that I can’t wait for a chicken sandwich? A grilled chicken sandwich. I dream of these things.

AND ICE CREAM.

I AM TOTALLY GOING TO CULVER’S ON DAY 22.

Maybe not.

I’m sure a Culver’s meal will totally mess with my stomach.

But the chicken…

I spent day 18 evening dropping boxes off at my parents’ house and picking up empties (plus totes!) from my parents’ house and my second parents’ house (in-laws). And then returning home and filling said vessels.

 

Can I just say how lucky I am to have TWO incredible families in my life?

 

That’s 86% of the whole reason I want to have babies ASAP. Because more people should come into this world and experience this blissful familial life.
